On 23 February 2007, was constituted the International Society of Acetic Acid Bacteria (ISAAB). The bylaws were signed in Parma (Italy) by five research groups, all of them members of the VRN, from five different universities. The Society was formally introduced at the symposium: Traditional Balsamic Vinegar age and other practical aspects in Reggio Emilia on 24 February 2007.

The objectives of the Society shall be to encourage, stimulate, support, and conduct research on Acetic acid bacteria and their implication in ecology, agriculture and biotechnology or other sciences directly applied to vinegars.
